Vinification

The grapes for the Loups Garoux are carefully harvested when half of each bunch has begun to raisin, then fermented alongside fresh, vibrant fruit. The process begins with an overnight whole-cluster maceration, followed by gentle destemming and traditional foot crushing. Six weeks of open-vat skin fermentation allow rich flavors and textures to develop fully.
