  • Vinification

    Following careful manual selection, the grapes are gently pressed and the must clarified via static settling. Spontaneous fermentation takes place entirely in concrete utilizing a traditional pied de cuve.

  • Ageing

    In concrete vats for a year, followed by an extended cellaring period of at least 24 months in the bottle prior to release.
