    After careful sorting at harvest and at the winery, grapes are destemmed and transferred gently to vats. Cold pre-fermentation maceration extracts tannins and aromas before alcohol development. Punchdowns and pump-overs are adjusted per batch to achieve optimal balance and harmony.

    12–18 months in French oak of varying size, age, and origin to soften the wood and highlight the appellation’s nuances. No racking during aging; wines are returned to the mass for 2–3 months to clarify naturally.
