    Grapes are meticulously sorted during harvest and at winery arrival, then gently destemmed and transferred using elevators to preserve freshness. A cold pre-fermentation maceration allows for delicate extraction of tannins and aromas. Pigeage and pumping over are adapted case by case to ensure optimal balance and harmony.

  • Ageing

    12 to 18 months in French oak barrels of varying sizes, ages, and origins to carefully manage wood influence and highlight the appellation's nuances. Minimal racking is done during the first 2–3 months.
