Vinification
Field-harvested grapes were gently pressed without skin maceration. The juice rested overnight in stainless steel before a natural settling (débourbage) the following day. Fermentation occurred spontaneously with native yeasts in 500-liter tonneaux.

Ageing
The wine aged for 15 months on fine lees in the same tonneaux, without bâtonnage, and was bottled unfiltered.
