Vinification
Fermentation takes place in barrique barrels at a controlled temperature for approximately 15-20 days, depending on the ripeness of the grapes. Yeasts are added during the fermentation process, but malolactic fermentation is only allowed to occur if it is spontaneously active.

At least 10 months in barrique barrels, followed by another 2 months of bottle aging. Before bottling, the wine is lightly clarified through light filtration.
