Il Guercio Toscana IGT
Il Guercio has a distinctly peppery nose and a lighter style, while its total acidity and the complexity gained from long maceration give the wine both freshness and elegance.

Vinification
Grapes are harvested late to achieve maximum ripeness from this high-altitude vineyard. Fermentation is spontaneous in cement tanks, with a small portion foot-crushed and fermented in an open bin. About 30% of the grapes are whole cluster, with the remainder destemmed. Maceration lasts four months, with gentle pump-overs performed intermittently.
